This is by far one of the number 1 recipes in my house, and definitely one of my favorite sides to make for dinner. I absolutely love fresh rosemary and when it’s roasted it’s absolutely delicious!
Ingredients:
1/4 cup Olive Oil
1 small bunch of Rosemary
2 Tablespoons of chopped Garlic
2 lbs Red Potatoes
Directions:

1. Dice the potatoes as evenly as you can so that they cook evenly, leaving the skin on.
2. Mix in a bowl with the other 3 ingredients.
3. Put on a baking sheet in one single layer
4. Put in the oven 400 degrees for 45 minutes stirring every 15 minutes.
